Veggie Frittata


– 6 organic eggs
– 1/4 cup milk (dairy or plant-based)
– 1 cup chopped vegetables (e.g., spinach, bell peppers, mushrooms)
– 1/2 cup shredded cheese (e.g., cheddar, feta)
– 2 tablespoons chopped fresh herbs (e.g., parsley, basil)
– Salt and pepper to taste
– Olive oil for greasing the pan


1. Preheat the oven to 375°F (190°C) and grease a baking dish or pie pan with olive oil.
2. In a bowl, whisk together eggs, milk, salt, and pepper.
3. Heat a skillet over medium heat and add a drizzle of olive oil.
4. Sauté the chopped vegetables until they soften.
5. Pour the egg mixture into the skillet and stir in the cooked vegetables, shredded cheese, and chopped herbs.
6. Cook for a few minutes until the edges start to set.
7. Transfer the skillet to the preheated oven and bake for about 15-20 minutes until the frittata is set and slightly golden.
8. Remove from the oven, let cool for a few minutes, and slice into wedges.
9. Serve warm or at room temperature.
