Stuffed Bell Peppers


– 4 bell peppers (any color)

– 1 cup cooked brown rice

– 1 can black beans, rinsed and drained

– 1 cup corn kernels

– 1/2 cup diced tomatoes

– 1/2 cup shredded cheddar cheese

– 1/4 cup chopped fresh cilantro

– 1 teaspoon cumin

– 1/2 teaspoon chili powder

– Salt and pepper to taste


1. Preheat the oven to 375°F (190°C) and line a baking dish with parchment paper.

2. Cut the tops off the bell peppers and remove the seeds and membranes.

3. In a large bowl, combine cooked brown rice, black beans, corn kernels, diced tomatoes, cheddar cheese, cilantro, cumin, chili powder, salt, and pepper.

4. Stuff the mixture into the bell peppers and place them in the baking dish.

5. Bake for about 25-30 minutes until the peppers are tender and the filling is heated through.

6. Remove from the oven, let cool for a few minutes, and serve.
