Roasted Vegetables with Balsamic Glaze


– Assorted vegetables of your choice (e.g., carrots, zucchini, bell peppers, red onions, cherry tomatoes)
– 2 tablespoons olive oil
– 2 tablespoons balsamic vinegar
– 2 cloves garlic, minced
– Salt and pepper to taste
– Fresh herbs for garnish (e.g., thyme, rosemary)


1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
2. Cut the vegetables into bite-sized pieces.
3. In a bowl, whisk together olive oil, balsamic vinegar, minced garlic, salt, and pepper.
4. Place the vegetables on the prepared baking sheet and drizzle the balsamic mixture over them. Toss to coat evenly.
5. Spread the vegetables in a single layer and roast for about 25-30 minutes until tender and caramelized, stirring once or twice during cooking.
6. Remove from the oven, garnish with fresh herbs, and serve hot.
