Quinoa Salad with Lemon Vinaigrette


– 1 cup cooked quinoa
– 1 cucumber, diced
– 1 bell pepper, diced
– 1 cup cherry tomatoes, halved
– 1/4 cup red onion, finely chopped
– 1/4 cup fresh parsley, chopped
– Juice of 1 lemon
– 3 tablespoons extra-virgin olive oil
– Salt and pepper to taste


1. In a large bowl, combine cooked quinoa, cucumber, bell pepper, cherry tomatoes, red onion, and parsley.
2. In a small bowl, whisk together lemon juice, olive oil, salt, and pepper.
3. Pour the lemon vinaigrette over the quinoa mixture and toss well to combine.
4. Adjust the seasoning if needed.
5. Serve chilled and enjoy!
