Organic Berry-Oatmeal Breakfast Muffins


– 2 cups organic rolled oats

– 1 cup organic whole wheat flour

– 1/2 cup organic honey or maple syrup

– 1/4 cup organic coconut oil, melted

– 2 organic eggs

– 1 cup organic mixed berries (blueberries, raspberries, strawberries)

– 1 teaspoon organic vanilla extract

– 1 teaspoon baking powder

– 1/2 teaspoon baking soda

– Pinch of salt


1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.

2. In a large bowl, combine the oats, whole wheat flour, baking powder, baking soda, and salt.

3. In a separate bowl, whisk together the honey (or maple syrup), melted coconut oil, eggs, and vanilla extract.

4. Pour the wet ingredients into the dry ingredients and mix until well combined.

5. Gently fold in the organic mixed berries.

6. Divide the batter evenly among the muffin cups, filling each about 3/4 full.

7. Bake for 18-20 minutes or until the muffins are golden brown and a toothpick inserted into the center comes out clean.

8. Allow the muffins to cool slightly before serving. Enjoy as a nutritious and delicious breakfast or snack.
