Lentil Soup


– 1 cup dried green lentils, rinsed and drained

– 1 onion, chopped

– 2 carrots, diced

– 2 celery stalks, diced

– 3 cloves garlic, minced

– 4 cups vegetable broth

– 1 can diced tomatoes

– 1 teaspoon ground cumin

– 1 teaspoon ground coriander

– 1/2 teaspoon turmeric

– Salt and pepper to taste

– Fresh parsley for garnish (optional)


  1. In a large pot, heat olive oil over medium heat.
  2. Add chopped onion, diced carrots, and diced celery. Sauté for 5 minutes until the vegetables soften.
  3. Add minced garlic, ground cumin, ground coriander, and turmeric. Stir and cook for an additional minute.
  4. Add rinsed lentils, vegetable broth, and diced tomatoes to the pot.
  5. Season with salt and pepper.
  6. Bring to a boil, then reduce heat to low, cover, and simmer for 30-40 minutes until the lentils are tender.
  7. Adjust seasoning if needed.
  8. Garnish with fresh parsley and serve hot.
